Cortevecchia Farm is a small family-run company located in Cortevecchia, on the hills surrounding San Piero a Sieve, in the heart of Mugello. Its vineyard, which covers one hectare of land, is mainly cultivated with Pinot Noir, following the growing trend in Mugello's viticulture that sees great potential in this grape variety. The uniqueness of Cortevecchia Farm lies in the production of a classic method sparkling wine from Pinot Noir, a unique project in the area that sets the company apart from local production. Founded in 2012 out of Sandro Bettini's passion for bubbles and supported by the valuable contribution of Nello Baglioni, the farm immediately aimed to create a high-quality product. The vineyards are located in a particularly suitable area, with a ventilated and sunny climate, ideal for the growth of Pinot Noir grapes. Organic viticulture is at the core of the company's practices, with special attention to vineyard management, which is carried out through a bush-trained system supported by a metal ring to favor cluster aeration. All operations, from harvesting to pruning, are done by hand. So far, in addition to the sparkling wine, a red wine has also been produced, currently aging, and a rosé. However, the focus remains on the classic method sparkling wine, named "Primum Salubre Ascesa." The first bottled vintage, 2014, was disgorged in September of the previous year, after a maturation of 42 months on the lees. The result is a sparkling wine of great elegance and finesse, distinguished by the correct dosage and extraordinary quality, able to compete with the best classic method wines in Italian production.
